Ingredients

Salad:
  • 1 cup pearled couscous
  • 1 tablespoon Country Crock® Original Spread Original Spread
  • 1 1/2 cups water
  • 1/2 teaspoon sea salt
  • 3/4 cup halved grape tomatoes
  • 3/4 cup chopped cucumber
  • 1/4 cup drained and chopped Kalamata olives
  • 1/2 cup crumbled feta cheese
Dressing:
  • 1/4 cup Country Crock® Original Spread, melted Original Spread
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh Italian parsley
  • 1 tablespoon smooth Dijon mustard
  • 1 teaspoon honey
  • 1/4 teaspoon sea salt
  • a pinch of black pepper

Instructions

Dressing
  1. Prepare the dressing in a small mixing bowl. Whisk the ingredients together until the mixture has thickened slightly. Set aside while you cook the couscous to allow the flavors to marinate.
  2. In a saucepan, melt 1 tablespoon of Country Crock® Original Spread over medium-high heat.
  3. Add the couscous to the pan and toast, until fragrant, about 3 minutes. Stir the couscous frequently to evenly toast.
  4. Add the water and salt to the pan and bring to a boil. Reduce to simmer, cover, and boil the couscous until tender, about 15 minutes. Drain any excess liquid in the pan, and transfer the couscous to a baking sheet. Spread into an even layer and allow to cool.
  5. Just before assembling the salad, whisk the dressing again. Then, toss the dressing, cooled couscous, grape tomatoes, cucumbers, olives, and feta together in a large bowl. Serve chilled or at room temperature.
