Ingredients

  • 3 tablespoons Country Crock® Original Spread, divided Original Spread
  • 1 large chicken breast
  • 1 tablespoon Cajun spice seasoning, divided
  • 2 1/2 cups uncooked pasta
  • 1/2 cup white onion, chopped
  • 3/4 cup celery, chopped
  • 3/4 cup red bell pepper, chopped
  • 3/4 cup tomatoes, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon tomato paste
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, shredded

Instructions

  1. Melt 2 tablespoons of the Country Crock®Original Spread in a small skillet. Sprinkle some of the Cajun seasoning onto each side of the chicken breast. Cook the chicken for 5 minutes on each side until the internal temperature reaches 165 degrees F. Set aside to rest for 10 minutes before slicing into strips.
  2. Cook the pasta to package directions
  3. In a large skillet over medium/high heat, melt the remaining Country Crock® Original Spread, add the onion, bell pepper, tomatoes, salt, pepper and remaining Cajun seasoning. Cook until the veggies start to sweat. Then add the tomato paste and cook until the veggies have softened. Mix in the cream, pasta, chicken and parmesan cheese.
