Southwestern Mac and Cheese

Our Southwestern Mac and Cheese recipe is like a loaded Mac and Cheese with Southwest flair. We've taken a basic creamy cheddar cheese sauce and pumped it up with tomato, roasted red pepper, chilies and of course, bacon. This is a recipe that the whole family will love.

Ingredients

1 1/2 cups 2% milk
1/4 cup Country Crock® Light Spread
4 teaspoons all-purpose flour
2 cups shredded sharp cheddar cheese
1 medium tomato, chopped
1/2 cup chopped jarred roasted red pepper
1 can (4.5 oz.) chopped green chilies
3 slices bacon, cooked and crumbled
8 ounces elbow macaroni, cooked and drained

Instructions

Preheat oven to 350°.
Whisk milk, Country Crock® Spread and flour in large saucepan; bring to a boil over medium-high heat, whisking frequently. Reduce heat and cook, stirring occasionally, until thickened, about 5 minutes.
Stir in remaining ingredients except macaroni. Cook, stirring occasionally, until cheese is melted. Stir in macaroni.
Pour mixture into an 8-inch baking dish. Bake until heated through, about 15 minutes.
