Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2/3 cup oat milk
  • 1/2 cup Country Crock® Plant Butter with Avocado Oil Stick, melted
  • 1 1/2 cups fresh corn kernels
  • 1 can (4 oz.) diced green chilies
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 350˚F. Grease and flour 8 x8-inch baking dish.
  2. Combine flour, cornmeal, sugar, baking powder and salt in a large bowl. Mix egg, milk and melted Plant Butter. Stir egg mixture into flour mixture just until moistened. Stir in corn, chilies and cilantro. Pour into prepared baking dish.
  3. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes then cut into 2-inch squares. Serve warm with Plant Butter.
