Instructions

  1. In a large pot or Dutch oven, melt Country Crock Plant Butter over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, mushrooms, Italian seasoning, red pepper flakes (if using), salt and pepper. Cook for another 5 minutes
  4. Pour in vegetable broth and tomato sauce. Stir well to combine.
  5. Bring the soup to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
  6. Add broken lasagna noodles to the pot and continue to simmer for another 10-12 minutes, or until the noodles are cooked al dente.
  7. Season with extra salt and pepper to taste.
  8. Serve with a drizzle of Country Crock Plant Cream and fresh basil or parsley, if desired
