    Ingredients

    • 1 sleeve of graham crackers
    • 1 pound fresh strawberries sliced plus extra for garnish
    • 2 cups Country Crock Homestyle Dairy Free Heavy Whipping Cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • mint for garnish (optional)

    Instructions

    1. In a mixing bowl, combine the Country Crock Homestyle Dairy Free Heavy Whipping Cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form. This will be your whipped cream.
    2. Line the bottom of an 8-inch pan with parchment paper. Then, add a layer of graham crackers, arranging them in a single layer.
    3. Spread a layer of whipped cream over the graham crackers, covering them completely.
    4. Arrange a layer of sliced strawberries over the whipped cream.
    5. Repeat the layers: graham crackers, whipped cream, and strawberries, until you've used up all the ingredients, finishing with a layer of whipped cream on top.
    6. Smooth the top of the cake with a spatula to create an even layer of whipped cream.
    7. Cover the cake with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.
    8. Before serving, garnish with fresh strawberries and extra graham cracker crumbles or mint leaves, if desired.
    9. Carefully lift the parchment out of the pan and slice the cake into wedges. Serve chilled and enjoy!
    Strawberries don't have to be the only fresh fruit you incorporate into this no-bake cake. Almost any berry will taste great with the graham cracker and whipped cream, particularly blueberries.
