Instructions

  1. Prepare the spice cake mix according to the instructions on the package, substituting Country Crock® for vegetable oil. After the cake is baked, cool completely.
  2. In a large bowl, crumble the cake until you have fine crumbs that are uniform in size. Add the cream cheese frosting and mix to combine. Start with 1/2 cup of frosting. You want the spice cake mixture to be easy to shape into a ball, but not soggy. If the mixture is dry and crumbling after adding 1/2 cup, add another 1/4 cup.
  3. Using a cookie dough scoop, scoop spice cake mixture into 24 balls. Use your hands to round out any straight edges. Place onto a baking sheet or plate. Melt a small amount of the white candy melts. Dip each lollipop stick in melted chocolate and then insert into the center of each ball. Transfer to the freezer and freeze for at least 2 hours.
  4. Melt the remaining candy melts. Dip each frozen cake ball into the melted candy melts. Cover the cake balls completely. Decorate spice cake pops and place upright in a styrofoam block or cardboard box. Let stand until the coating is set.
