Ingredients

  • 1/3 cup Country Crock Drizzle & Sizzle, divided
  • 1/4 cup soy sauce
  • 3 tablespoons agave nectar
  • 2 tablespoons chopped chipotles in adobo
  • 3 peeled garlic cloves finely chopped
  • 1 lime zested and juiced
  • 2 pounds boneless, skinless chicken thighs
  • Salt and Pepper to taste

Instructions

  1. In a small saucepan, combine Country Crock® Drizzle & Sizzle with the soy sauce, agave, chipotles in adobo, garlic, lime zest and juice. Heat over medium-low, whisking until smooth, 2-3 minutes. Let cool slightly, 5-10 minutes.
  2. Place the chicken in a resealable plastic bag and add half the marinade, reserve the remaining marinade. Seal the bag, squeezing out any excess air, and massage the chicken to coat. Refrigerate for at least 30 minutes or up to two hours.
  3. On a medium-hot griddle or skillet, squeeze enough Country Crock® Drizzle & Sizzle to coat the cooking surface. Remove the chicken from the marinade and place on the griddle (or skillet) smooth-side down and cook until chicken no longer sticks and is lightly charred, 5 to 7 minutes, brushing chicken with half of the reserved marinade. Flip chicken and cook for an additional 5 to 7 minutes, brushing with remaining marinade, until a thermometer registers 165°F in the thickest part of each thigh. Remove chicken and let rest 5-10 minutes before serving.
