Ingredients

  • 1/4 cup Country Crock® Original Spread Original Spread
  • 1 medium onion, diced
  • 1/4 teaspoon garlic powder
  • 1/4 cup flour
  • 3 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 pounds white potatoes, peeled (optional), or rinsed, sliced about 1/8'' thick
  • Additional salt and pepper, to taste
  • 2 cups shredded mozzarella cheese
  • chopped parsley for garnish, optional

Instructions

  1. Place sliced potatoes into a bowl of cold water while you prepare recipe. Preheat oven to 350F. Grease a 9x13” casserole dish with Country Crock.
  2. For the sauce, melt Country Crock over medium heat then add onion. Cook until the onion is softened, about 5 minutes. Stir in garlic powder and flour and cook for an additional 1-2 minutes.
  3. Increase heat to high, add milk gradually then salt and pepper. Continue to stir frequently, as you bring mixture to a boil then reduce to low-medium and simmer for about 3 minutes. Mixture will not thicken significantly, just slightly.
  4. Layer a third of the potatoes on the bottom of dish and sprinkle with salt and pepper. Pour a third of the sauce over the top and use a spatula to smooth it over entire surface. Repeat the layers, finishing with the sauce. Sprinkle with mozzarella cheese. Cover and bake for 45 minutes.
  5. Uncover and bake for an additional 40-45 minutes or until golden brown, and the potatoes are tender.
  6. Allow it to rest for 10-15 minutes before serving. Garnish with chopped parsley if desired and enjoy!
