Instructions
In a large mixing bowl, combine the grated potatoes, corn kernels, all-purpose flour, grated Parmesan cheese, eggs, and half of the chopped chives. Season with salt and pepper. Mix well to combine.
Heat a medium skillet over medium heat. Once hot, add a drizzle of Country Crock Drizzle & Sizzle.
Use an ice cream scoop to add approximately ¼ cup of potato batter into the pan. Press down with the spatula to ensure they are evenly pressed onto the pan.
Fry for 3-4 minutes on each side.
Remove and season with extra salt.
Serve with more Country Crock Drizzle & Sizzle and chives.
