Ingredients

For The Cream:
  • 1 cup Country Crock® Plant Cream
  • 4-5 tbsps maple syrup (use honey or agave, if preferred)
  • 2 tsp vanilla extract
  • 1 cup Greek-style plain yogurt (substitute with your favorite vegan Greek yogurt)
For The Peach Puree:
  • 3 Cups peaches fresh, sliced (or frozen)
  • 3 tbsp maple syrup (use honey or agave, if preferred)
  • 6 tbsp water
To Freeze
  • Popsicle Mold – we used silicone.
To Serve:
  • Popsicle Sticks

Instructions

  1. In a medium chilled bowl, whisk the cold Country Crock® Plant Cream, maple syrup and vanilla extract to soft peaks, then fold in Greek yogurt, set aside.
  2. In a blender, add peaches, maple syrup and water, blend until smooth. *To ensure the best flavor, use ripe, juicy peaches for your peach puree. Look for peaches that are slightly soft to the touch and have a fragrant aroma. If fresh peaches are not available, frozen peaches can be used as a convenient alternative.
  3. Taste test! You can adjust the sweetness by adding more maple syrup as desired in both the cream and peach mixtures! You can also use honey or agave syrup, if preferred. *The sweetness of the popsicles can be adjusted to your preference. Taste test the cream and peach mixtures before freezing, and add more if desired. Keep in mind that freezing can slightly mute the sweetness, so it’s better to have the mixtures slightly sweeter than you prefer.
  4. Fill a silicone popsicle mold ¼ way with peach puree, then ¼ way of the Country Crock® Plant Cream mixture. Continue alternating between the two mixtures for the other 2 layers. *Layering Technique: To create beautiful and distinct layers in your popsicles, use a spoon or small ladle to carefully add the peach puree and cream mixture.
  5. Cover the mold, add popsicle sticks, and freeze for at least 5-6 hours or overnight.
  6. Take out the popsicles by pushing the bottom of the silicon mold, or they will easily slide out after sitting at room temperature for a few minutes. Enjoy!
