Instructions
Preheat oven to 350 degrees. Lightly grease a 8 x 4-inch baking loaf pan and line with parchment paper. For easy transfer, make sure to leave enough paper to overhang on the long sides. Set aside.
In a medium bowl, combine the flour, baking powder and salt. Whisk together and set aside.
For this step, you can use either a large bowl with an electric mixer or a stand mixer with a paddle attachment. Add the sugar and orange zest. Mix on low speed until lightly moist. About a minute.
With the mixer on low speed, slowly add the eggs one at a time. Once the eggs are beaten, add the melted plant butter, vanilla, and almond extract. Continue mixing to combine. Next begin adding the ½ of the flour mixture slowly then the yogurt and then the remaining flour and yogurt. Add the juice of the orange and poppy seeds. Continue mixing until combined.
Pour the batter into the loaf pan and using a spoon, smooth the top.
Put into the pre-heated oven and bake for 45-50 minutes or until a toothpick or tester in the center of the loaf comes out clean.
When the loaf is fully baked, remove from the oven and transfer to a wire cooling rack. Brush the 3 tablespoons orange juice on top and allow to cool in the pan. After 10-15 minutes, transfer loaf from the pan onto cooling rack to cool completely.
Prepare the glaze by combining all the ingredients and mixing well until smooth and desired consistency. Should be thin enough to drizzle on top of the loaf and not run off it.
With a spoon drizzle the glaze over the loaf. And garnish with orange zest if desired. Let the glaze set before serving. Slice and spread Country Crock ® Plant Butter on top and enjoy!
