Ingredients

  • 12 OZ short pasta of choice (rigatoni, penne or ziti)
  • 1/4 cup
  • 1 onion finely chopped
  • 2 peeled garlic cloves minced
  • 8 OZ cremini mushrooms sliced
  • 1 (14.5) can diced tomatoes
  • 2 1/2 Cups vegetable broth
  • 1 cup Country Crock® Plant Cream
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoons red pepper flakes
  • salt and pepper to taste
  • basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large oven safe skillet over medium heat.
  3. Melt Country Crock Olive Oil Plant Butter before adding chopped onion. Sauté until translucent, about 5 minutes, then stir in minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add sliced cremini mushrooms to the skillet and sauté until they release their moisture and become tender, about 5-7 minutes.
  5. Stir in diced tomatoes (with juices), vegetable broth, Country Crock Plant Cream, Italian seasoning, salt, and pepper.
  6. Add the uncooked pasta to the skillet with the creamy mushroom sauce. Be sure the pasta is evenly distributed and fully submerged in the liquid.
  7. Cover the baking dish with a lid or foil and bake in the preheated oven for 30 minutes, stirring halfway through baking to ensure even cooking.
  8. Remove the foil and stir in nutritional yeast, if using, for added cheesy flavor. Bake for an additional 10 minutes, or until the top is lightly golden.
  9. Remove from the oven and let it cool for a few minutes before serving
  10. Garnish with chopped fresh basil or parsley before serving.
