Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper
  2. In a large mixing bowl, cream together the softened Country Crock Plant Butter Avocado Oil Sticks and granulated sugar until light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract to the butter mixture. Mix until well combined
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the mixed berries until evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake in the preheated oven for 60-80 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the banana bread from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
