Ingredients

  • 1 cup fresh ore frozen lima beans
  • 3 center-cut bacon strips
  • 1/2 cup yellow onion, chopped
  • 1 teaspoon garlic, finely chopped
  • 2 cups fresh or frozen corn kernels
  • 1 cup fresh or thawed frozen green beans, trimmed and cut into ¾-inch pieces
  • 1/4 cup Country Crock® Original Spread Original Spread
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons fresh dill, finely chopped

Instructions

  1. In a saucepan, add 2 cups of water and bring it to a boil. Add the lima beans and cook for 7-8 minutes until tender. Once done, drain the water and set the beans aside.
  2. Heat a large skillet on a medium flame, cook the bacon slices until crispy. About 10 minutes, flipping halfway through. Transfer the bacon to a plate lined with a paper towel and set aside, leaving the bacon drippings in the pan.
  3. To the same skillet add onion and garlic, and cook for 4-5 minutes until the onions are caramelized.
  4. Stir in the corn kernels, green beans and cooked lima beans. Add Country Crock and sauté for 5-6 minutes.
  5. Season the succotash with salt and pepper. Remove the skillet from the heat and stir in the cherry tomatoes.
  6. Chop cooked bacon and sprinkle on top of the succotash. Finish with chopped parsley and dill.
  7. Transfer the succotash to a plate and serve. Enjoy!
