Ingredients

  • 2 pounds baby Yukon Gold potatoes
  • salt to taste
  • 1/3 cup Country Crock Drizzle & Sizzle
  • 3 peeled garlic cloves minced
  • 2 teaspoons ancho chile powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon lime zested
  • 1/2 cup crumbled chorizo (cooked) (2 ounces)
  • 1/3 cup scallions chopped

Instructions

  1. Place potatoes in a medium saucepan and cover with 2 inches of water. Season generously with salt and bring to a boil. Reduce heat to a simmer and cook until potatoes are just tender when pierced with a knife, 20-25 minutes. Drain, pat dry and let stand until cool enough to handle. On a flat surface, very lightly crush each potato with the bottom of a glass.
  2. In a large bowl, combine Country Crock® Drizzle & Sizzle, garlic, ancho chile powder, oregano and lime zest and season with salt. Brush the spread onto the top of the warm smashed potatoes.
  3. Heat griddle or cast iron skillet over medium heat. Once hot, add the potatoes in a single layer. Cook until crisp and golden brown, about 4 to 6 minutes. Flip the potatoes and cook on the other side, 4 to 6 minutes more. Remove potatoes to serving platter and sprinkle with chorizo and scallions.
