Instructions

  1. In large skillet, over medium-high heat, heat 2 tablespoons Country Crock Plant Butter until melted. Add onion, broccoli and red pepper and cook, 8 minutes, stirring occasionally, until vegetables are softened.
  2. Reduce heat to medium, add remaining tablespoon Country Crock Plant Butter, mushrooms, garlic, herbs de Provence and Italian seasoning. Season to taste with salt and pepper. Cook 4 minutes or until vegetables are tender. Stir in 2 tablespoons Country Crock Plant Cream and cook one minute.
  3. Remove from heat and transfer vegetable mixture to bowl to cool. Once cooled, stir in Violife Vegan Mozzarella Shreds until combined. Set aside.
  4. While vegetable mixture is cooling, preheat oven to 400°F. Line 2 baking sheets with parchment paper. On lightly floured surface, unfold puff pastry sheet and roll into 10 x 15-inch rectangle. Spoon half the vegetable mixture along one long edge of the pastry rectangle. Brush the other long edge of the pastry with Country Crock Plant Cream. Roll up to enclose the filling and form one long roll. Repeat with second puff pastry sheet.
  5. Cut each roll into 5 pieces. Arrange on prepared baking sheets. Brush each roll with Country Crock Plant Cream and sprinkle with sesame seeds. Bake 20 to 25 minutes or until golden brown, rotating baking sheets halfway through cooking time. Serve hot and enjoy!
