Nutritional Guidelines (per serving)

(Nutrition information is calculated using an ingredient database and should be considered an estimate.)

Instructions

  1. Preheat the oven broiler. Place the eggs into a shallow bowl and beat slightly with a fork, place flour in a separate shallow bowl.
  2. Season the chicken with salt and pepper. Dip chicken in egg and then flour, tossing to coat. Place the chicken on a plate.
  3. In an oven safe skillet, melt 3 tablespoons of Country Crock over medium heat. Add the chicken and cook until the bottom side is golden brown, about 3-4 minutes. Flip the chicken and add the other 3 tablespoons of Country Crock swirling the melted Country Crock around the chicken. Cook, basting the chicken until the chicken is cooked and golden brown, about 4 to 5 minutes.
  4. Reduce the heat to medium low and pour in the chicken broth and lemon juice. Simmer for 5 minutes. Remove from the heat and arrange the prepared sliced peaches around the chicken. Broil 1 minute, until the peaches are softened.
  5. Grate some fresh parmesan over top and sprinkle with fresh basil to complete the Peachy Chicken Summer Skillet. Enjoy!
A hot skillet is the key to properly browning chicken. If time allows, let your chicken and eggs come to room temperature before beginning the cooking process. That way, when the chicken hits the sizzling skillet – it will start browning right away, making your Peachy Chicken Summer Skillet taste better than ever.
