Instructions

  1. Whisk together the eggs, flour, melted Country Crock®, baking powder and salt. Add the carrots, scallions, and garlic and toss to coat.
  2. Preheat a skillet over medium-low heat and add a thin layer of Country Crock® spread to the pan.
  3. Working in batches, scoop 2 tablespoon-sized balls of the carrot mixture into the pan, and pat it down gently into a round patty. Cook until the bottoms turn golden brown and crispy and the fritters are starting to cook through, about 3-4 minutes. Use a thin spatula to carefully flip each fritter and continue cooking until the other sides are also brown and crispy, 3-4 minutes. Transfer to a wire rack and repeat with remaining carrot mixture.
  4. Sprinkle with minced chives and serve warm with sour cream or yogurt for dipping.
