Ingredients

  • 1 cup oat milk
  • 1 package (2 1/4 teaspoons) active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup Country Crock Salted Sticks, melted + extra for brushing on top
  • 2 large eggs, room temperature, beaten
  • 4 - 4 1/2 cups bread flour, divided
  • 1/2 teaspoons salt
  • vegetable oil
  • flaked salt, for topping

Instructions

  1. Gently heat milk to about 100-110 degrees F. Use a kitchen thermometer to measure the temperature. You can also check the temperature by submerging a clean finger into the warm milk. It should feel warmer than room temperature, but it shouldn't be so hot that you must remove your finger. Add yeast and a pinch of sugar to the milk, and whisk to dissolve. Wait a few minutes for foamy bubbles to form on the surface.
  2. Combine the yeast and milk mixture with melted CC salted sticks and sugar in a large mixing bowl or the bowl of an electric stand mixer. Add 3 cups bread flour and salt to the bowl and beat for a few minutes on medium speed. Add eggs and beat to combine. Gradually add a little bit of flour until a soft dough forms. Note that the dough will be sticky.
  3. Transfer dough to a lightly floured surface and knead until smooth and elastic, about 6-8 minutes. Grease a clean bowl and place the dough in the bowl. Turn the dough once to completely coat with oil. Cover bowl and set aside in a warm place to rise for about one hour, or until the dough has doubled in size.
  4. Punch down the risen dough and return to a lightly floured surface. Divide into 24 equal-sized portions and shape into balls. Transfer to a greased 13x9'' baking pan. Cover and let rise in a warm place for another hour.
  5. Preheat the oven to 375 degrees F. Brush the risen rolls with melted Country Crock, add a pinch a flakey salt to each roll, and bake until fluffy and golden brown, 15-18 minutes.
