Ingredients

  • 1 box spaghetti, or pasta of your choice
  • 3 tablespoons Country Crock® Original Spread, divided Original Spread
  • 1 1/2 cup diced pancetta
  • 1/2 pound snow peas, julienned
  • 1 cup fresh shelled peas, or frozen peas
  • 4 green onions, thinly sliced diagonally
  • 12 asparagus spears, bottoms discarded and sliced into pieces
  • 1/2 cup fresh flat leaf parsley leaf, finely chopped
  • 1 cup grated Parmesan cheese, plus extra to serve
  • Juice of 1 lemon
  • salt and fresh ground pepper, to taste

Instructions

  1. Bring a large pot of salted of water to boil. Add the spaghetti and cook for 7 minutes or as directed on the box, stirring occasionally.
  2. Meanwhile, heat 1 tablespoon of Country Crock® original spread in a medium sauté pan over medium heat. Add the pancetta and cook until crispy. Transfer the pancetta to a paper towel lined plate and set aside.
  3. Give the sauté pan a wipe and then add the remaining Country Crock®, the vegetables, chopped parsley, and salt and pepper. Sauté on medium heat, about 4 minutes. Add the pancetta back to the pan, followed by the cooked and strained noodles, parmesan cheese, and lemon juice. Toss with tongs and serve hot with extra parmesan.
