Chili Mac & Cheese


1 lb. ground beef
1 medium zucchini, chopped
1/4 cup chopped onion
1 Tbsp. chili powder
1/2 tsp. dried oregano leaves, crushed (optional)
1 can (14.5 oz.) diced tomatoes, undrained
1 container Shedd's Country Crock™ Side Dishes Deluxe Elbow Macaroni & Cheese, heated according to package directions
1 cup crumbled plain tortilla chips
1/2 cup shredded Monterey Jack cheese (about 2 oz.)

In 12-inch nonstick skillet, brown ground beef with zucchini and onion. Stir in chili powder, oregano and tomatoes. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Stir in hot Shedd's Country Crock™ Side Dishes Deluxe Elbow Macaroni & Cheese. In shallow 2-quart casserole arrange beef mixture. Evenly top with tortilla chips, then cheese. Broil until cheese is melted.
