Ingredients

Maple Dijon Drizzle
Green Pea Country Spread
Toast Toppings
  • 2 tablespoons Green Pea Country Spread
  • 1 1/2 cup asparagus, cut into 2-inch size
  • 5-6 sourdough bread slices, toasted
  • 1 cup fresh argula
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons green onion, chopped

Instructions

  1. In a medium combine the ingredients for drizzle; garlic, Dijon mustard, lemon juice, apple cider vinegar, maple syrup, melted Country Crock, salt, and pepper. Set aside.
  2. Heat a small pan with 1 tsp of Country Crock Original Spread, add the chopped shallots, and sauté until the shallot softens.
  3. To a food processor: add the sauteed shallots, green peas, lemon zest, lemon juice, Country Crock Original Spread, salt, and pepper. Pulse until coarsely pureed. Set it aside.
  4. Heat a pan with a tablespoon of Country Crock Original Spread until melted. Then add the asparagus and cook for 3-5 minutes. Once done, allow the asparagus to rest.
  5. To arrange the spring toast; spread the Green Pea Country Spread over the toast evenly. Top with arugula followed by asparagus, feta cheese, and spring onions.
  6. Finally, drizzle the prepared Maple Dijon drizzle on top of the toast and serve while it is still warm.
